Cooking comfort food that's also healthy, especially during our extended mandatory stay at home, continues to be important. I'm glad to share it with you!
Fresh or Frozen these beans will get devoured!
- A bunch of Fresh { you'll need to blanch these before following the directions below } or a bag of Frozen Green Beans { petite, cut, whole, French, your preference } - BTW: You can use just about any other frozen vegetable in place of the green beans
- XV Olive Oil
- Tablespoon or so Unsalted Butter
- Kosher salt & fresh cracked pepper { the details make a difference but use whatever’s on hand }
- Use McCormick brand Garlic & Herb No-Salt seasoning for salt less cooking
- Any dried Italian or non Italian seasonings
From Fresh:
Boil a pot of water, once it boils add salt, put the fresh beans in pot and cook until you smell the beans cooking for approx. 3-5 minutes. Pull the beans out of the water to a plate. Then prep your sauté pan as directed below* under From Frozen.
From Frozen:
*Pour approx. 1 – 2 Tablespoons of XV Olive Oil in a sauté pan and heat on Medium, add 1 tablespoon of unsalted butter & let it melt { this will help keep the oil from burning your vegetables }
Add green beans, salt, pepper and other seasonings of your choice. Toss gently so the beans get coated with the oil, butter & seasonings
Keep tossing & cooking. You may also have to adjust your flame higher or lower, but play with it and taste the beans as you go
You really need to use your senses of smell, sight & your gut here. The green beans should not be hard & not be mush. There’s this perfect in between stage where you can pop a green bean in your mouth and there’s a touch of tender snap but not a mouth full of mush!
